Yes, you can make vegan toffee! I know I was so excited when I learned this and wanted to share this yummy recipe with you all ASAP! It reminds me of a heath bar, since of course I had to top my toffee off with a coating of chocolate! This is a super sweet treat that is sure to have your friends asking how its vegan?!

Ingredients:
1 cup Vegan Butter, I used Earth Balance
1 1/4 cups organic sugar
1 tablespoon maple syrup
1/2 cup oat milk
1/2 teaspoon fine salt
Chopped nuts, optional (I used peanuts)
3/4 cup dark chocolate chips (dairy free), melted
1 teaspoon coconut oil
Maldon Sea Salt, optional
Method of Preparation:
Prepare a baking sheet by lining it with parchment paper or a silicon baking mat.
Add the vegan butter, sugar, syrup, oat milk and salt to a large heavy bottomed pot and turn the heat to medium-high.
Stir constantly as the butter and sugar melts. Once the ingredients are melted, add in your sugar thermometer.
Keep stirring until the thermometer registers ‘soft crack stage’ or 285°F (137°C).
Turn off the heat, and pour the mixture onto the prepared baking sheet. Use the back of a spoon to spread the mixture out evenly.
Sprinkle with the chopped nuts while the toffee is still warm.
Melt the chocolate and coconut oil by microwaving in 30-second intervals, stirring in between until smooth.
Spread the chocolate evenly over the top of the brittle. Sprinkle with flaked sea salt.
Refrigerate until the chocolate is set, about 30 minutes. Break into shards and store in the refrigerator.
