Vanilla Bean Granola Butter Cups

These giant chocolate cups are filled with a creamy vanilla granola butter! They are so easy to make, and the best part is you can fill them with your favorite nut butter or creamy spread!



Ingredients:


1 1/2 cups dark chocolate chocolate chips, I used Lily's

1 tablespoon coconut oil

6 tablespoons vanilla granola butter, or nut butter of choice

Oats, for sprinkling (Optional)


Method of Preparation:


Prepare a cupcake pan with 6 cupcake liners.


In a microwave safe bowl melt the chocolate and the coconut oil in 30 second increments, stirring in between until the mixture is completely melted.


Pour about 2 tablespoons of the melted chocolate into the bottom of the cupcake papers. Pick up the pan and tilt in each direction slowly so that the chocolate works its way up the sides of the cupcake cup (about 1/4-inch high).


Refrigerate for 30 minutes, or until the base of chocolate is set.


Next, spoon about 1 tablespoon of the granola butter into the center of the chocolate cups. Repeat until they are all filled.


Take the remaining melted chocolate and cover the tops fo the cups, so that no granola butter is visible, making sure to work the chocolate all the way to the edges.


Refrigerate until completely set!
