Superfood Bites

These chocolate coconut bites are packed with antioxidants and make for the perfect sweet treat to end the day! I love making these on Sunday for the week ahead! It makes it so much easier to stick to my low sugar goals!



Ingredients:


1/3 cup pitted medjool dates, about 6 dates

2 tablespoons tahini

1/2 teaspoon vanilla extract

1/4 cup oat flour

1 tablespoon flax seed meal

2 tablespoons Nativas Cacao Plus Goji & Acai

1 ounce of melted dairy free dark chocolate

1/2 cup desiccated or flaked unsweetened coconut, toasted

1 teaspoon coconut oil


Method of preparation:


In the carafe of a food processor pulse the dates until they are smooth and form a ball on the blade.


Add the tahini, vanilla, oat flour, flax, cacao, and melted dark chocolate; pulse to combine thoroughly. The dough should be pretty smooth and pack together in your hand when you squeeze a fist. If it is too loose and crumbly, add another tablespoon of the tahini and pulse to combine.


Scoop the mixture out using a small ice cream scoop about 1 tablespoon of the mixture and roll into a ball using the palms of your hands.


Melt the coconut oil in a microwave safe bowl and then coat the bites in the coconut oil. Roll the coated bite in the toasted coconut to coat completely. Repeat until all of the bites are coated in coconut.


Refrigerate in an airtight container until ready to enjoy! :)
