Peanut Butter Chocolate Oat Bars

These taste like a Snickers and Butterfinger combined! These bars are creamy and crunchy and are filled with a peanut butter ganache! They are vegan, gluten free and refined sugar free! I couldn't stop eating them, I hardly had any left for this photo!



Ingredients:


3 cups gluten free rolled oats

1/4 teaspoon cinnamon

Pinch salt

1/2 cup coconut sugar

1 teaspoon vanilla extract

1/2 cup coconut oil, melted

1/2 cup oat butter - or sub in your fave nut butter (almond would be great here)

1/2 cup dairy free dark chocolate, I used Lily's Dark chocolate chips

1/2 cup peanut butter



Method of Preparation:


Preheat the oven to 350 degreed F.


Grease an 8X8-inch square pan and line with parchment paper.


Combine all of the ingredients except for the chocolate and peanut butter in a large bowl; stir until the oats are coated and everything is evenly combined.


Press 1/2 of the oat mixture into the bottom of the pan. Next, spread the remaining oat mixture out on a baking sheet. Bake both pans for 20 minutes, the oats should be golden brown.


Allow the oat base to cool for 30 minutes. Meanwhile, melt the chocolate in a microwave safe bowl, stirring in 30 second increments until the chocolate is completely melted. Stir the peanut butter into the dark chocolate and set aside.


Once cool, pour the chocolate peanut butter mixture onto the oat base and spread out evenly to the edges of the pan. Sprinkle the loose oat mixture on top of the chocolate layer, pressing down slightly. The chocolate layer should be completely covered, so be generous with your sprinkling.


Cool in the refrigerator for several hours or until the chocolate layer has set. Cut into squares and enjoy! :)


Store in the refrigerator!
