I Love Avocados so Matcha Cookies

These cookies might just be the cutest things ever! I took my love for avocados and matcha and created these creative little cookies. They are so simple to make and can be made using your favorite sugar cookie or shortbread cookie dough! Don't like matcha? Try adding natural green food coloring instead!


Ingredients:


1 cup gluten free oat flour

2 teaspoons matcha powder, culinary grade

1 teaspoon baking powder

1/3 cup sunflower butter

4 tablespoons maple syrup

2 tablespoons oat milk

1 teaspoon vanilla extract

10-12 whole hazelnuts


Method of preparation:


Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.


Combine all of the dry ingredients in a medium bowl and whisk to combine. In a separate bowl whisk together the wet ingredients. Then, combine the wet and the dry ingredients and stir until the ingredients are thoroughly combined.


Next, scoop about 2 tablespoons of the cookie dough and form it into an egg shape ion your hands. Then place the cookie down on the baking sheet and press down to flatten slightly. Place a whole hazelnut in the center, bottom of the avocado to resemble the pit. If the cookie cracks a bit, just press it back together!


Repeat with the remaining cookie dough. Bake the cookies for 12 to 15 minutes or until the edges are crisp and the centers are no longer dough-y.


Place on a cooling rack to cool completely, then transfer to an airtight container to store.
