Game Day Raw Brownie Bites

You are sure to score a touchdown with these chocolate-y treats! They are so simple to make and taste like a coconut filled brownie - now that's a big W if you ask me! Step aside loaded nachos! - game day isn't all about the cheesy, salty, roll yourself into bed snacks! These bites are absolutely delicious and made with just a handful of ingredients - so you can feel good about eating these even after all of the festivities!




Ingredients:

6 pitted medjool dates

1 cup unsweetened desiccated or flaked coconut

1/4 cup cacao powder

2 tablespoons water

1/2 teaspoon vanilla extract

Pinch pink sea salt


For the frosting:

1 cup powdered sugar

Splash of water


Method of Preparation:


In a food processor pulse the dates until they form a paste on the blade. Add the coconut, cacao, water, vanilla and salt; pulse to combine. The mixture should pack together when squeezed between your fingers.


Scoop the mixture using a small ice cream scoop then form into a football shape, and then flatten the top slightly. Repeat with the remaining brownie mixture.


For the frosting: Mix together the powdered sugar and a teaspoon of water until it forms a thick but pipe-able paste. If the mixture is too thick, add a teaspoon of water at a time until you reach the right consistency (should resemble toothpaste).


Put the frosting unto a disposable piping bag fitted with a small round tip (I used a #1). Pipe the football laces as pictured. Repeat until all of the footballs are piped.
