Avocado Mint Mousse

This mousse is so thick and creamy thanks to the avocado! The avocado also gives it this lovely light green hue! This mousse is packed with health benefits! Did you know that a serving of avocado has more potassium than bananas?!? Thats good news for me because fun fact, I HATE BANANAS! There I said it! I've hated them since childhood and personally the only thing I hate more than the taste is probably the smell!
Avocados are great for your overall health, so I love including them several times a week at least! While I love a good piece of avocado toast, I have to say its fun to switch it up occasionally! This recipe is healthy, but tastes like a mint chocolate blizzard! The consistency is similar to when you let your ice cream melt ever so slightly, or when you use your spoon to smooth it out into this creamy, melty mess. My boyfriends family was reminiscing about this texture and so I thought hmmm, why not just start there! Less work, and more time to enjoy this delicious creamy treat!

Ingredients:
1 large avocado
1/2 cup coconut yogurt, I used Anita's
1 tablespoon light agave, plus more depending on how sweet you want it
1/8-1/4 teaspoon peppermint extract
Coconut Milk Whipped Cream, homemade or store-bought
Blissfully Better Mint Thins, finely chopped (or use small dairy-free chocolate chips)
Method of Preparation:
In a blender or food processor process the avocado, yogurt, agave and extract until smooth and no lumps remain. Pour the avocado mousse into a bowl and top with a dollop of whipped coconut cream and chopped mint candies or chocolate chips! Note: You can also fold chocolate chips into the mousse if you want more chocolate!
